Drylaw™

Drylaw™ is a fresh take on organic grape-based spirit. Michele has been a consultant since the brand's inception, providing support on both supplier and client-related matters.

With a wide network in Italy, Spain and the UK, he managed to generate interest from a wide range of individuals and companies around the world. The brand sources premium organic grapes from around the globe. Then, they analyse the natural flavour profiles and add select strains of yeast to enhance the fermentation process. This is followed by low-temperature distillation (below 30°C) under vacuum allowing complex and ephemeral aromas  too be cultivated and unlocked during fermentation.
